Job Description

We are a seafood focused Italian restaurant in London looking for a Sous chef who lives and breath fish. About us modern italian with traditional base. we do handmade pasta, raw bar with oysters, whole fish on thr grill, crudo and seasonal uk seafood. Fast - paced, quality-first kitchen. You will work closely and report to the Head Chef, to deliver a healthy business and to support and develop the kitchen team and product. You will need: • 2+ years as Sous or strong CDP ready for step up, • confident with fish butchery, raw prep, oyster shucking, grill section, • HACCP knowledge for raw/seafood handling is key, • calm under pressure, leads by example, teaches junior chefs, • passion for italian regional seafood cooking A good level of spoken and written English is essential for the role.
